Substitute for Cream of Soup
2 cups nonfat dry milk 3/4 cup corn starch OR 1 1/2 cups flour 1/4 cup instant chicken bouillon 1/2 teaspoon pepper 1 Tablespoons dried onion flakes 1 teaspoon dried thyme, crushed (optional) 1 teaspoon dried basic, crushed (optional)
Combine all ingredients and store in airtight container. To use as substitute for 1 can condensed soup, mis 1/3 cup of the dry mix with 1 1/4 Cups water in saucepan. Cook and stir until thickened. Add to a recipe that calls for an undiluted cream soup.
I have used this, and think it works well. Note no fat. If you wanted to go more low sodium, you could buy the low sodium bouillon to use OR you could leave out the bouillon in the mix and instead of adding water, add low sodium broth. Also, I like using dried onion granules (Watkins). Use less or onion or garlic powder. I don't put in the pepper or the other herbs.
Sometimes I put half of the cornstarch and half of the flour in the mix.
