2 c. cauliflower or broccoli florets 1 Tbs butter 1/2 c. chopped onion 1 garlic clove, minced 1 tsp Worchestershire sauce 1 (12oz) bottle of Newcastle Brown Ale 1 (14.5 oz) can of chicken broth 3 Tbs cornstarch 3 Tbs water 2 c. half, and half 2 cups of aged or sharp Cheddar cheese, shredded In a small saucepan over medium heat, put the cauliflower (or broccoli) in just enough water to cover them, cook until tender, about 5-10 minutes. Drain and set aside In a large pot over medium heat, melt butter. Stir in onion, garlic , and Worchestershire sauce, and cook until the onion is translucent. Pour in Newcastle, and bring to a boil. Pour in chicken broth, and return to a boil. Let boil for about 5 minutes, then reduce heat and stir in cauliflower. In a small bowl combine carnstarch with 3 Tbs of water, and stir until dissolved. Set aside. Stir, half and half, and Cheddar into the soup until the cheese melts. Stir in cornstarch mixture, and continue to cook and stir until soup thickens. Serve immediatley.
